- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1 large egg yolk
- 1/4 cup buttermilk
- For the Filling:
- 1 1/2 cups diced asparagus
- 1/2 cup sliced green onions
- 1/2 tablespoon unsalted butter
- salt and pepper to taste
- 6 large eggs
- 1 cup milk
- 1/2 cup plus 2 tablespoons heavy cream
- pinch of salt and coarse ground pepper
- 1 cup grated sharp cheddar cheese or Gruyere cheese
