  • 2 c. raisins
  • 2 c. water
  • 1/2 c. brown sugar, packed
  • 2 Tbsp. cornstarch
  • 1 tsp. cinnamon
  • 1/8 tsp. salt
  • 1 Tbsp. lemon juice
  • 1 Tbsp. butter
  • dough for 2 crust pie

Directions

    Boil raisins in 1 3/4 cups water for 5 minutes.

    Combine brown sugar, cornstarch, cinnamon and salt.

    Moisten with remaining 1/2 cup water.

    Add to raisins and stir until mixture boils.

    Remove from heat.

    Add lemon and butter.

    Pour into unbaked 9-inch shell. Top with crust. Bake at 425° for 25 minutes.
