- 1/2 c. chopped leek
- 1/2 c. chopped onion
- 1/2 c. finely chopped celery
- 2 large apples, chopped
- 1/4 c. butter
- 2 Tbsp. flour
- 1 c. grated Cheddar cheese
- 1/2 c. light cream
- 7 c. chicken or turkey stock
- 4 c. peeled, diced butternut squash
- 1 tsp. thyme
- 1 tsp. salt
- 1/2 tsp. sage
- 1/4 tsp. turmeric
- 1/4 tsp. rosemary
- pinch of nutmeg
- pepper to taste
Directions

1Saute vegetables and apples in butter.

2Stir in flour and cook.

3Add stock and simmer 10 minutes.

4Add squash and cook.

5Add seasonings.

6Add cider and cream; heat through.

7Remove from heat. Stir in cheeses.

8Garnish with croutons.
