  • 4 ears fresh yellow corn
  • 1 med tomato, chopped
  • 1 Jalapeno pepper, seeded ,chopped
  • 1/4 fresh celantro
  • 1/4 cup white vinegar
  • 2 tbs. lime juice
  • 1 Large avacado
  • 1/2 tsp. salt
  • 1/4/cup chopped red bell pepper
  • 3/4 cup water
  • 1/4 cup chopped red bell pepper

Directions

    cut corn kernels from cob into a sacepan. Add water and bring to a boil. Cover, reduce heat and simmer 6 to 7 minutes. Drain and place in bowl. Stir in tomato and remaining ingredients. Cover and chill for 8 hours. Great with chicken of fish.
