  • 1 avocado ripe
  • 1 onions chopped
  • 1 garlic cloves minced
  • 3 tablespoons fresh coriander chopped
  • 1 teaspoon coriander powder
  • 1 teaspoon ground cumin
  • 2 tablespoons all-purpose flour
  • 1 small eggs
  • salt
  • ground black pepper
  • olive oil for frying

Directions

    Cut the avocado in half, and remove seed.

    With a spoon, remove all the pulp. Place the avocado in a bowl, and mash with a fork.

    Add the remaining ingredients, and mix well.

    Heat a skillet with a little olive oil (not much is needed).

    When hot, add spoonfuls of avocado batter, and fry on both sides.

    If the dough is too runny, add a little more flour, it depends on the size of the egg and avocado used.

    Serve hot with steamed vegetables, a green salad, or a soup.
