  • 1/2 lb bulk Italian sausage
  • 1/2 lb ground beef
  • 1 medium onion, chopped
  • 1 carrot, grated
  • 3 garlic cloves, pressed
  • 1 cup chicken stock
  • 1 (28 ounce) can roasted tomatoes, crushed
  • 1 cup tomato sauce (I use Prego or Classico)
  • 1 bay leaf
  • 1 teaspoon basil, dried
  • 1 lb campanelle pasta (any shape will work, but this provides a nice presentation)
  • 1/4 cup fresh parsley, chopped
  • 1 cup part-skim ricotta cheese
  • 1 cup part-skim mozzarella cheese
  • 1/4 cup parmesan cheese
  • salt and pepper
