Babka(Polish Bread)

Ingredients

  • 5 lb. flour + 1 to 2 extra c.
  • 1 qt. milk
  • 5 pkg. quick rise yeast
  • 1 lb. raisins, soaked in hot water
  • 1 lb. butter
  • 3 c. sugar
  • 1 doz. eggs
  • 1/2 tsp. salt

Directions

    Set aside 1 cup flour from total amount.

    Mix together flour, rapid rise yeast and all other dry ingredients in large pot. Heat butter and milk to 125° to 130°.

    Stir warm liquids into dry mixture.

    Add eggs and extra flour, kneading and mixing until it stops sticking to fingers.

    (You may need extra flour.)

    Squeeze water from raisins and knead raisins into dough.

    Cover, let rise 10 minutes.

    Put into greased loaf pans.

    Let rise in warm oven until doubled, then bake at 350° for 20 to 30 minutes.

    Makes 6 to 8 loaves.
