Bacon And Cabbage Pasta

- 2 13/16 tablespoons butter
- 4 rashers thick cut bacon, cut into strips
- 2 onions peeled and finely chopped
- 4 tablespoons caster sugar
- 11 3/8 cups cabbage cored and chopped
- 4 tablespoons white wine vinegar
- 6 3/4 tablespoons beef stock
- 3 bay leaves
- 1/2 teaspoon allspice

1Heat the butter in a large, deep, lidded frying pan. Add the bacon and cook for 3-4 mins. Remove from the pan with a slotted spoon and drain on paper towels. Add the onions to the pan, sprinkle with the sugar and cook for 3-5 mins to caramelize. Add the cabbage and stir-fry for 2-3 mins. Add 1/2 cup water along with the vinegar, stock, bay leaves, allspice and the cooked bacon. Cook over medium heat, covered, for 30-40 mins, stirring frequently.

2Meanwhile, cook the pasta in boiling, salted water according to the package instructions. Drain and stir in the cabbage broth just before serving. Divide between 4 bowls and garnish with the watercress.
