  • 3 1/2 cups diced peeled baking potato (about 1 1/2 pounds)
  • 1 cup chopped green bell pepper
  • 1/4 teaspoon salt, divided
  • 1/8 teaspoon black pepper
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh parsley
  • 3/4 cup (3 ounces) reduced-fat shredded sharp Cheddar cheese
  • 6 bacon slices, cooked and crumbled

    Bring 3/4 cup water to a boil in a medium saucepan. Add potato, bell pepper, 1/8 teaspoon salt, and black pepper; cook 15 minutes or until potato is tender, stirring once.
