- 1 c. self rising flour
- 3 Tbsp. sugar (optional)
- 8 strips bacon, cooked and crumbled
- 1 egg
- 1 c. buttermilk
- 1/4 c. vegetable oil
Directions

1Preheat oven to 425°.

2Grease muffin cups.

3Stir together cornmeal, flour and sugar, if desired, in mixing bowl.

4Combine buttermilk and oil together and add to dry ingredients, stirring until blended.

5Stir in crumbled bacon.

6Spoon batter into prepared muffin cups, filling each 2/3 full.

7Bake 15 to 18 minutes or until golden brown.
