- 3 slices Thick Cut Bacon, Cut Into Bite Size Pieces
- 1 bag (24 Oz. Size) Tasteful Selections Ruby Selection Potatoes, Washed And Cut Into Quarters
- 1 cup Sweet Bell Pepper, Diced Small
- 1/2 cups Onion, Diced Small
- 1/4 teaspoons Thyme
- 1 teaspoon Ground Pepper

1In a skillet over medium low heat, cook bacon until crispy, stirring occasionally, about 10 minutes. With a slotted spoon, remove bacon and drain the fat from the pan, leaving 1 tablespoon of bacon fat.

2In the same skillet the bacon was cooked in, add the potatoes. Cover the skillet and cook for 10 minutes, stirring occasionally. Add the peppers, onions, thyme and ground pepper and mix well. Cover and cook, stirring occasionally, for 10 more minutes or until the potatoes are fork tender. Stir in bacon and serve warm.
