Bacon Spinach Swirls

Ingredients
- 1 puff pasty sheet, thawed
- 1 egg
- 1 tbsp water
- 1/2 cup Pepper Jack Cheese, Shredded
- 1/3 cup Parmesan Cheese, grated
- 1/3 cup green onions, finely chopped
- 8 slice bacon, cooked crisp and crumbled
- 1/2 tsp salt
- 1/2 tsp fresh cracked black pepper
- 1/2 tsp garlic powder
- 1 packages of frozen spinach, 10 oz., thawed and drained well
Directions

1Preheat oven to 400F.

2Beat egg and water and set aside.

3Mix shredded cheese, parmesan cheese, garlic powder, black pepper and salt.

4Set aside.

5Unfold pastry sheet onto lightly floured surface (That is important and it will stick, if it's not lightly floured!).

6I use a sheet of wax paper on the counter for easy clean up and to roll up it up (you will see what I mean further down in the directions).

7Brush pastry with egg mixture.

8Sprinkle cheese mix on pastry.

9Sprinkle Bacon on top of cheese mix.

10Sprinkle spinach on top of bacon.

11(I tear up tiny pieces with my fingers)

12Roll up pastry, jelly roll style.

13I use the wax paper to roll it up, and twist up the ends so it looks like a package.

14Put pastry roll in freezer for at least 15 minutes to firm up just a bit.

15Remove from freezer and slice.

16I like mine thinner so I go just under 1/2 inch.

17If anything falls out of the slice, when you place it on your baking sheet just stuff it back in the swirl.

18Place swirls on a baking sheet lined with parchment paper.

19(This helps with clean up, and makes the bottoms crisp up nicely).

20Brush top of swirls with egg mixture.

21Bake for 14-16 minutes or until golden brown.

22Best when served warm but still tasty when served after they have cooled.

23TIPS: can use turkey bacon, or omit bacon for a meat free option.

24Also can add diced pimentos for contrasting color.
