Bacon Stuffed Potatoes

  • 8 large baking potatoes
  • 1/4 c. butter
  • 1 c. sour cream
  • 1 egg
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 9 crisp bacon slices, baked and crumbled
  • paprika

Directions

    Scrub potatoes and dry.

    Rub with oil and bake directly on oven rack at 400° until tender.

    Slit and scoop out center. Place in a mixing bowl.

    Add butter, sour cream, egg, salt and pepper.

    Beat well.

    Stir in bacon crumbs.

    Pile mixture back into six potato shells, mounding high.

    Sprinkle with paprika.
