- 2 tsp. dry yeast
- 1 1/2 c. warm water
- 3 Tbsp. sugar
- 1 Tbsp. salt
- 4 1/2 c. flour
- 1 tsp. sugar
- 1 gal. boiling water
Directions

1Combine the yeast and 1 3/4 cups flour.

2Add water, sugar and salt to yeast mixture.

3Beat at a low speed for 1/2 minute, constantly scraping the sides of the bowl.

4Then beat at high speed for 3 minutes.

5Stir in enough of the remaining flour to make a moderately stiff dough.

6Turn onto a lightly floured board and knead until smooth.

7Cover and let rest for 15 minutes.

8Divide dough into 12 portions.

9Shape into balls and punch a hole in center of each with a floured finger.

10Pull gently to enlarge hole. Keep in uniform shape.

11Cover and let rise for 20 minutes.
