Ingredients

  • 2 lb. yellow eye beans (soaked overnight)
  • 1 c. white sugar
  • 1 c. dark maple syrup
  • 1 tsp. mustard
  • 1 1/2 tsp. salt
  • shake of ginger
  • lean salt pork as desired
  • 1/2 tsp. baking soda

Directions

    Drain off water from beans and add fresh water with 1/2 teaspoon baking soda.

    Simmer until beans are tender.

    Drain off soda water and add fresh water to cover with remaining ingredients.

    Simmer for 20 minutes to 1/2 hour.

    Bake in bean pot or roaster at 375° for 4 hours, covered, then let brown.

    Add water, if needed, and stir every 1/2 hour.
