- 2 lb. yellow eye beans (soaked overnight)
- 1 c. white sugar
- 1 c. dark maple syrup
- 1 tsp. mustard
- 1 1/2 tsp. salt
- shake of ginger
- lean salt pork as desired
- 1/2 tsp. baking soda
Directions

1Drain off water from beans and add fresh water with 1/2 teaspoon baking soda.

2Simmer until beans are tender.

3Drain off soda water and add fresh water to cover with remaining ingredients.

4Simmer for 20 minutes to 1/2 hour.

5Bake in bean pot or roaster at 375° for 4 hours, covered, then let brown.

6Add water, if needed, and stir every 1/2 hour.
