- 1 qt. pea beans
- 3/4 lb. pork
- 1 Tbsp. salt
- 3 Tbsp. sugar
- 1 Tbsp. or 1 c. molasses to taste
- 1/2 tsp. dry mustard
- 1 c. boiling water
Directions

1Pick over beans and cover with cold water; soak overnight. Drain and then cover with fresh water.

2Heat slowly, keeping water below boiling point.

3Cook until skins will burst which is best determined by taking a few beans on top of spoon and blowing on them.

4Skins will burst if sufficiently cooked.

5Drain beans, scald pork and scrape.

6Remove a 1/4-inch slice and put in bottom of bean pot.

7Mix salt, molasses and sugar.

8Add 1 cup boiling water and pour over beans.
-
9Cover bean pot and bake 6 to 8 hours at 250°.

10Uncover last hour and add boiling water, if needed.
