  • 1 eggplant, sliced 1/2-inch thick
  • onion salt, garlic and pepper
  • 1 egg
  • 1/2 c. milk
  • 1/2 c. bread crumbs

Directions

    Wash and slice eggplant.

    Sprinkle with onion salt, garlic and pepper.

    Beat egg and milk; dip eggplant slices in mix.

    Put slices on piece of foil.

    Cover with bread crumbs.

    Place slices in baking dish and bake at 375° to 400° until brown.

    Good and easy.
