Baked Cauliflower

- 1 medium cauliflower
- 1 c. cream
- 2 egg yolks
- 1 tsp. Dijon mustard
- 1/2 tsp. Worcestershire sauce
- 4 oz. grated sharp cheese
- 2 Tbsp. butter
- 4 soda crackers, crushed
- salt to taste
- dash of cayenne
Directions

1Separate cauliflower into florets and blanch (8 to 10 minutes) in boiling water.

2Drain and transfer to buttered baking dish.

3In another bowl mix cream, egg yolks, mustard, Worcestershire sauce, salt, pepper, cayenne and cheese together.

4Place sauce over cauliflower in casserole and coat evenly.

5Melt butter and mix in crackers.

6Sprinkle over casserole and bake at 350° for 35 to 45 minutes.
