- 1 (1 lb. 10 oz.) can whole green chilies
- 1/2 lb. Monterey Jack cheese, cut in strips
- 1/2 lb. Cheddar cheese, grated
- salt, pepper, liquid red pepper to taste
- 5 large eggs
- 1/4 c. flour
- 1 1/4 c. milk
Directions

1Slip a strip of cheese in each chili pepper.

2Arrange 1/2 of chilies in baking dish; sprinkle with half of grated cheese. Repeat layers, ending with cheese.

3Carefully pour egg, milk and flour mixture over all.

4Bake, uncovered, in 350° oven for about 45 minutes or until knife inserted in center comes out clean.
