Baked Eggs and Basil

- 3 tablespoons margarine
- 2 tablespoons flour
- 14 teaspoon salt
- 18 teaspoon pepper
- 14 cup snipped fresh basil or 1 teaspoon dried basil
- 1 cup milk
- 4 eggs
- salt and pepper
Directions

1In a a small saucepan melt the margarine.

2Stir in the flour, salt, pepper and dried basil (if using).

3Add milk all at once.

4Cook and stir over medium heat till thickened and bubbly.

5Cook/stir one minute more.

6Remove from heat.

7Stir in fresh basil (if using).

8Coat custard cups with margarine.

9Spoon about 2 Tablespoons basil sauce into each dish.

10Gently break an egg into the center of each dish.

11Season with salt and pepper.

12Spoon remaining sauce atop eggs.

13Bake in a 350 degree oven for 18-20 minutes or till egg is set.

14Garnish with snipped basil if desired.
