- 3 or 4 lb. fish, dressed
- 4 Tbsp. butter or other fat, melted
- 1 1/2 tsp. salt
- 3 slices bacon (optional)
Directions

1Clean, wash and dry fish.

2Rub inside and out with salt.

3Place fish in a greased baking pan.

4Brush with melted fat and lay slices of bacon over the top.

5Bake in a moderate oven at 350° for 40 to 60 minutes or until fish flakes easily when tested with a fork.

6If fish seems dry while baking, baste occasionally with drippings or melted fat.

7Serve immediately on a hot platter, plain or with a sauce.
