Baked Fish Creole

- 1 lb. fish fillets, thawed
- 2 tsp. butter or margarine
- 2 Tbsp. green pepper, chopped
- 1/3 c. onion, chopped
- 1 clove garlic, chopped
- 1 1/2 c. canned or fresh tomatoes, chopped
- gumbo file to taste (optional)
- lemon slices
Directions

1Place fish fillets in greased shallow baking dish (the dish should be small enough so that the sauce completely covers fillets.

2In small skillet melt butter and saute until tender, green pepper, onion and garlic.

3Add and heat tomatoes.

4Pour Creole sauce over top of fillets.

5Place thin slices of lemon over top.

6Bake uncovered in 425° oven for 20 minutes or until fish flakes easily.
