Baked Flounder

  • 1 (3 to 4 lb.) flounder (dressed)
  • 10 medium peeled potatoes
  • 1 large onion
  • 1 Tbsp. salt
  • 1 tsp. pepper
  • 1/2 c. cooking oil
  • 1/2 c. water
  • 5 slices bacon

Directions

    Gash flounder on top and lay in a greased baking pan.

    Cut potatoes in round slices and lay around fish.
  3. 3
    Salt both fish and potatoes; slice onion and put over potatoes.

    Cut bacon strips in half and lay over fish, potatoes and onions.

    Pour oil and water over potatoes.

    Bake 45 to 50 minutes at 400°.
