- 1 (3 to 4 lb.) flounder (dressed)
- 10 medium peeled potatoes
- 1 large onion
- 1 Tbsp. salt
- 1 tsp. pepper
- 1/2 c. cooking oil
- 1/2 c. water
- 5 slices bacon
Directions

1Gash flounder on top and lay in a greased baking pan.

2Cut potatoes in round slices and lay around fish.

3Salt both fish and potatoes; slice onion and put over potatoes.

4Cut bacon strips in half and lay over fish, potatoes and onions.

5Pour oil and water over potatoes.

6Bake 45 to 50 minutes at 400°.
