Baked Herb Rice

  • 2 c. regular rice, uncooked
  • 5 Tbsp. butter, melted
  • 4 c. consomme, heated and divided (chicken, best)
  • 1/4 tsp. oregano
  • 1/4 tsp. thyme
  • 1 Tbsp. parsley flakes
  • 3/4 c. finely chopped celery
  • 1/2 c. finely chopped onion
  • 1 c. slivered almonds

Directions

    Brown rice in butter for 5 minutes, stirring constantly. Combine rice, 3 1/4 cups consomme and herbs in a greased 2-quart casserole.

    Cover and bake at 350° for 1 hour, stirring several times. Stir in remaining 3/4 cup consomme, vegetables and almonds. Stir well. Cover and bake for 45 minutes.
