- 1/4 c. butter or margarine
- 1/2 c. flour
- 1/2 c. milk
- 2 eggs, slightly beaten
- ground nutmeg
- 3 to 4 Tbsp. powdered sugar
- lemon or jam
Directions

1Heat oven to 425°.

2Melt butter in 10 to 12-inch skillet (preferably cast-iron variety).

3Combine flour and milk; beat lightly (okay if lumpy).

4Add slightly beaten eggs.

5Pour into skillet.

6(Recipe turns out best if butter is still quite warm.) Sprinkle with nutmeg lightly.

7Place in heated oven.

8Bake 10 to 12 minutes.

9Recipe should rise around edges and puff slightly in middle.

10Serve immediately sprinkled with powdered sugar.

11May squeeze lemon or serve with jam.
