Baked Raspberry Vanilla Pudding

- 1 (10 oz.) pkg. frozen raspberries in syrup, thawed
- 4 eggs
- 1/2 c. milk
- 1/2 c. heavy cream
- 1/4 c. flour
- 1/4 c. plus 1 Tbsp. sugar
- 1/2 tsp. vanilla extract
Directions

1Preheat oven to 375°.

2Lightly butter a 9-inch pie plate or a 1-quart shallow baking dish.

3Spread the raspberries and their juice evenly on bottom of pie plate.

4Make the batter.

5In blender, mix eggs, milk, cream, flour, 1/4 cup of sugar and vanilla; blend well.

6Pour batter over fruit.

7Sprinkle with extra tablespoon of sugar.

8Bake for 20 to 25 minutes or until pudding is set and golden around edges.
