- 6 large yellow squash
- 2 slices bacon, fried crisp
- 1 onion, chopped
- bread crumbs
- 2 Tbsp. butter
- minced green pepper
- salt and pepper
Directions

1Cut squash in half lengthwise.

2(Do not remove skins.) Boil in salted water for 10 to 15 minutes.

3Drain.

4Scoop out center, leaving 1/4 inch shell.

5Mash scooped out part and season with chopped onion, minced pepper, salt and pepper.

6Add crumbled bacon and butter.

7Fill shells; sprinkle with buttered crumbs.

8Bake 20 minutes at 375°.

9Serves 6.
