  • 3 c. yellow squash
  • 2 c. grated carrots
  • 2 chopped onions
  • 1 c. cream of chicken soup, diluted
  • 1 small carton sour cream
  • 1 stick margarine
  • 1 (8 oz.) pkg. chicken flavored stuffing mix

Directions

    Cut up squash and onions.

    Cook in salted water until tender; drain.

    Mash with potato masher.

    Mix chicken soup, sour cream and pimentos.

    Melt margarine over stuffing mix.

    Line baking dish with 2/3 of stuffing, then pour squash filling on top with rest of stuffing.

    Bake at 340° for 35 minutes.
