  • 2 c. steamed winter squash
  • 2 Tbsp. brown sugar, packed
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 2 Tbsp. butter
  • 2 Tbsp. cream
  • dash of ground nutmeg
  • 1/4 c. chopped or diced roasted almonds

Directions

    Mash squash; stir in butter, sugar, cream, seasonings and eggs.

    Fold in part of almonds, reserving a few for garnish.

    Pour into greased 1-quart casserole.

    Top with remaining almonds.

    Bake in 375° (moderately hot) oven for 30 to 40 minutes.
