  • 1 pound carrots (about 5 small), scraped and sliced diagonally
  • 1 cup water
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons honey
  • 1 teaspoon olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 teaspoon dried basil
  • 1/8 teaspoon black pepper

Directions

    Place carrot in a large saucepan; add water, and bring to a boil. Cover, reduce heat, and simmer 10 minutes or until tender. Drain; return carrot to saucepan.

    Combine vinegar and remaining 5 ingredients in a small bowl, stirring well with a wire whisk; add to carrot. Cook over medium heat 2 minutes, stirring often. Serve warm.
