- 3 small red onions
- 1/4 cup plus 2 tablespoons good balsamic vinegar
- 1/4 cup good olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Directions

1Preheat the oven to 375 degrees.

2Cut the onions in half and slice 1/4 inch thick.

3Place on a baking sheet and toss with 1/4 cup balsamic vinegar, the olive oil, salt, and pepper.

4Bake for 10 to 12 minutes, until the onions are tender.

5Remove from the oven, toss with 2 more tablespoons balsamic vinegar.
