- 50 grams Sultanas (raisins)
- 300 grams Ripe Bananas, Peeled
- 175 grams All-purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 125 grams Butter, Melted
- 150 grams Castor Sugar
- 2 whole Eggs
- 1 teaspoon Vanilla Essence
- 1 Tablespoon Sour Cream/ Greek Yogurt
- 100 grams Sliced Almonds
Directions

1Preheat the oven to 170 C.

2Soak the sultanas in a bowl of hot water for 10 minutes.

3In a bowl, mash the bananas and set aside.

4Put the flour, baking powder, and baking soda in a bowl, and combine well.

5In another large bowl, mix the melted butter and sugar and beat until blended. Whisk in the eggs one at a time and add the vanilla essence. Add mashed bananas and stir in the drained sultanas. Add in half of the flour mix and stir well. Mix in the yogurt/sour cream and the remaining flour mixture. Stir well and pour into an 8-inch loaf tin and bake for about an hour or until the cake is golden.
