Ingredients

  • 1 cup mashed banana (from 2 large overripe bananas)
  • 1 cup firmly packed dark brown sugar
  • 2 None eggs, beaten lightly
  • 3 tbsp butter, melted
  • 1/2 cup buttermilk
  • 1/4 cup molasses
  • 1 1/2 cups flour
  • 1 cup self-rising flour
  • 2 tsp mixed spice, such as pumpkin pie spice
  • 1 tsp baking soda

Directions

    Preheat the oven to 350°F. Grease an 8 x 4-inch loaf pan and line the bottom and long sides with parchment paper, extending the paper 2 inches over the sides.

    Combine the banana, sugar, eggs, butter, buttermilk and molasses in a large bowl. Stir in the combined sifted dry ingredients (do not overmix; the batter should be lumpy). Spoon the mixture into the prepared pan.

    Bake for about 1 hour until toothpick inserted into center comes out clean. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
