Ingredients
- 1 3/4 c. all-purpose flour
- 2/3 c. sugar
- 1 tsp. double-acting baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1/2 c. shortening
- 1 c. mashed bananas (about 2 very ripe medium bananas)
- 2 eggs, slightly beaten (Egg Beaters work very well)
Directions

1Preheat oven to 350°.

2Grease and flour 9 x 5-inch loaf pan. In large bowl with fork, mix first 5 ingredients.

3With pastry blender or 2 knives used scissor-fashion, cut in shortening until mixture resembles coarse crumbs.

4With fork, stir in bananas and eggs just until blended; spread batter evenly in pan.

5Bake 55 minutes to 1 hour until toothpick inserted in center comes out clean.

6Cool in pan on wire rack 10 minutes; remove from pan and cool completely.
