Banana Nut Bread

  • 1/2 c. shortening
  • 1 c. sugar
  • 2 eggs
  • 1 c. mashed ripe bananas
  • 1 tsp. lemon juice
  • 2 c. sifted flour
  • 3 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. chopped pecans

Directions

    Cream shortening and sugar together.

    Beat eggs until light and add.

    Add lemon juice to mashed bananas.

    (This keeps the bananas light and fluffy.)

    Add to creamed mixture.

    Sift flour, baking powder and salt together and mix quickly into banana mixture.

    Add nuts.

    Bake in greased loaf pan in moderate oven, 375°, about 1 hour and 15 minutes.
