Banana Nut Bread

Ingredients

  • 1 1/2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/3 c. shortening
  • 3/4 c. firmly packed light brown sugar
  • 2 eggs
  • 1 c. (2 to 3) mashed ripe bananas
  • 1/2 c. milk
  • 1/2 c. walnuts, chopped

    Sift together flour, soda and salt.

    Cream shortening and sugar thoroughly.

    Add eggs and bananas, beating until light. Alternately add flour mix and milk; beat after each addition until smooth.

    Stir in nuts.

    Pour batter into greased 9 x 5-inch loaf pan.

    Bake in moderate oven at 350° for 1 hour and 5 minutes or until tests done.

    Remove from pan and cool on wire rack.
