- 1/2 c. shortening or oil
- 1 c. sugar
- 2 eggs
- 2 c. mashed ripe bananas
- 2 c. all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 c. chopped pecans
Directions

1Cream shortening; gradually add sugar, beating well.

2Add eggs, one at a time, beating well after each addition.

3Add bananas and mix until smooth.

4Combine flour, baking powder, soda and salt; add to creamed mixture, stirring until just moistened.

5Stir in chopped pecans.

6Pour batter into a greased and floured 9 x 5 x 3-inch loaf pan.

7Bake at 350° for 1 hour and 15 minutes.

8Cool in pan 10 minutes.

9Remove cake to wire rack to complete cooling.

10Yield: one 9-inch loaf.
