  • 1 1/2 c. sugar
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 3 ripe bananas, mashed
  • 3/4 c. buttermilk
  • 1 c. chopped pecans
  • 2 c. sifted flour
  • 1 tsp. baking powder
  • 1/2 c. shortening
  • 2 eggs
  • 1 tsp. vanilla

Directions

    Combine sugar, flour, soda, baking powder and salt in a large mixing bowl.

    Add shortening, bananas, eggs, buttermilk and vanilla. Beat until smooth. Stir in pecans.

    Pour batter into a greased and floured 9 x 13-inch pan or two round cake pans. Bake at 325° for 25 minutes if in layers or 35 minutes if in a rectangular pan.
