- 1 cup All-purpose Flour
- 1 Tablespoon Sugar
- 2 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 1/4 teaspoons (heaping) Cinnamon
- 1 Egg
- 1 cup Milk
- 2 Ripe Bananas, Mashed
- 2 Tablespoons Vegetable Oil (or Natural Applesauce)
- 1/2 teaspoons Vanilla Extract
- 1/4 cups Nuts, Chopped (optional)
Directions

1Combine the flour, sugar, baking powder, salt, and cinnamon in a small bowl.

2In a larger bowl, mix together the egg, milk, bananas, vanilla, and oil. Slowly add in the flour mix to the banana mixture; the batter will be lumpy.

3Heat a skillet or griddle over medium heat and spray lightly with nonstick spray. Scoop out 1/4 cup of the batter. Add nuts once one side is almost done. Cook until both sides are golden.
