Banana Pudding

Ingredients

  • 1 c. sugar
  • 5 1/2 Tbsp. cornstarch
  • 1/2 tsp. salt
  • 3 c. milk
  • 2 eggs, slightly beaten
  • 3 Tbsp. butter
  • 1 1/2 tsp. vanilla
  • 1 box vanilla wafers
  • 3 bananas

Directions

    Mix sugar, cornstarch and salt, gradually add milk and cook in double boiler over boiling water until thick.

    Spoon a small amount of this mixture into the slightly beaten eggs.

    Stir and pour back into pudding and cook for about 3 minutes, stirring constantly. Take off burner and add butter and vanilla.

    In a glass (9 x 13-inch) Pyrex pan cover bottom with vanilla wafers, then a layer of sliced bananas, then a layer of pudding.

    Repeat until all pudding is used.
