  • 3 medium bananas, very ripe & mashed
  • 1 cup nonfat yogurt
  • 12 cup brown sugar, lightly packed
  • 14 cup vegetable oil
  • 1 23 cups flour
  • 2 teaspoons baking soda
  • 2 tablespoons ground flax seed meal

Directions

    Preheat oven to 400 degrees F. Prepare a cupcake pan with paper cups or non-stick cooking spray.

    Combine the mashed bananas, yogurt (or sour cream) brown sugar and vegetable oil.

    In another bowl, combine the flour and baking soda.
