  • 2 Cucumbers
  • 2 Carrots
  • 1 Jalapeno Pepper
  • 5 Peppercorns
  • 2 Star Anise
  • 3 Tablespoons Sugar
  • 1 teaspoon Salt
  • 1/2 cups Rice Wine Vingegar
  • 1 cup Hot Tap Water

    1. Cut cucumbers and carrots into matchsticks (or whatever shape you prefer).

    2. Slice jalapeno pepper into rounds.

    3. Add the vegetables to a jar with peppercorns and start anise.

    4. In a measuring cup, add sugar, salt, vinegar and hot tap water. Whisk really fast and pour over vegetables.

    5. Cover, and in a couple of days, you'll have pickles.
