Basic Bechamel Sauce Recipe

- 2 Tbsp. Butter
- 2 Tbsp. Minced onions
- 2 Tbsp. Flour
- 2 1/2 c. Warm lowfat milk
- 1/2 tsp Salt
- 1/4 tsp White pepper
- 1 pch Grated nutmeg
Directions

1In small, heavy saucepan, heat butter.

2As soon as butter is melted, add in onions and cook over medium flame for 3 min, or possibly till onions begin to turn golden brown.

3Stir in flour.

4Stir in lowfat milk and cook, stirring constantly till smooth.

5Add in salt, pepper, and nutmeg, and cook over low flame for 30 min, stirring occasionally.

6Strain.

7Bechamel sauce may be prepared in advance, and keeps well in refrigerator for more than two weeks.

8Makes 2 c. of sauce.
