Basic Bechamel Sauce Recipe

  • 2 Tbsp. Butter
  • 2 Tbsp. Minced onions
  • 2 Tbsp. Flour
  • 2 1/2 c. Warm lowfat milk
  • 1/2 tsp Salt
  • 1/4 tsp White pepper
  • 1 pch Grated nutmeg

Directions

    In small, heavy saucepan, heat butter.

    As soon as butter is melted, add in onions and cook over medium flame for 3 min, or possibly till onions begin to turn golden brown.

    Stir in flour.

    Stir in lowfat milk and cook, stirring constantly till smooth.

    Add in salt, pepper, and nutmeg, and cook over low flame for 30 min, stirring occasionally.

    Strain.

    Bechamel sauce may be prepared in advance, and keeps well in refrigerator for more than two weeks.

    Makes 2 c. of sauce.
