Ingredients
- 2 3/4 cups (675 ml) unbleached all-purpose flour (approx.)
- 1 tsp (5 ml) salt
- 4 eggs
- Flat beater
- Dough hook
Directions

1Place flour and salt in the mixer bowl.

2Attach the flat beater and mixer bowl to the mixer.

3Set to stir and mix briefly.

4Add eggs and mix until dough forms large clumps.

5Using your hands, form dough into a ball.

6If dough is shaggy and dry, and wont form a ball, add 1 tsp (5 ml) water and mix until incorporated.

7If its too sticky, add 1 tbsp (15 ml) flour and mix until incorporated.

8If necessary, keep adding water or flour in small increments and mix until dough comes together.

9Remove the flat beater and attach the dough hook to the mixer.

10Set to speed 2 and knead for 2 minutes, until dough comes together in a firm ball.

11Remove dough and wrap in plastic wrap.

12Let rest for 20 minutes before rolling out.
