- 2 eggs
- 1/2 tsp. salt
- 5 Tbsp. peanut oil
- 1 c. chopped green onions
- 4 c. cold cooked rice
- 2 Tbsp. chicken broth
- 3 Tbsp. soy sauce
- 1/2 tsp. pepper
- 1/8 tsp. sesame oil
Directions

1Beat eggs with 1/4 teaspoon salt in small bowl.

2Heat 2 tablespoons of peanut oil in wok over medium-high heat for 1 minute.

3Pour in beaten eggs.

4Stir continuously until eggs are cooked dry and separated into small pieces.

5Remove cooked eggs and set aside. Heat 3 tablespoons peanut oil in wok over medium-high heat for 1 minute.

6Add green onions and cold rice. Stir-fry 5 minutes.

7Add chicken broth, remaining salt and soy sauce.

8Stir to mix well.

9Stir in cooked eggs, pepper and sesame oil.
