- 2 medium onions, diced
- 8 tomatoes, Romas preferred
- 1/2 cup vegetable oil
- 1 teaspoon cayenne pepper
- 1 teaspoon seasoning salt
- 1/2 teaspoon thyme
- 1 green pepper, diced (optional)
Directions

1Heat oil in frying pan and saute onions until soft, but not brown.

2Add tomatoes, cayenne pepper, seasoning salt and thyme (plus green pepper is using).

3Fry for 30 minutes until tomatoes are soft and deep red in color.
