- 1 cup butter, softened
- 1 1/4 cups sugar
- 4 None medium eggs, beaten
- 1 1/4 cups self-rising flour, sifted
- 2-3 tbsp milk or water
Directions

1Preheat oven to 325°F. Using the cake pans as a guide, cut out two 8 inch circles of parchment paper. Brush pans with oil or melted butter. Place a paper circle in base of each one. Grease again.

2Place butter and sugar in a bowl. Beat with a wooden spoon or electric whisk until very pale and fluffy.

3Add eggs a little at a time, beating well between each addition until creamy. If mixture starts to curdle, add a little flour; beat well.

4Lightly stir in the flour. When most of flour is mixed in, add the milk or water. Stir gently just until smooth. Divide mixture between the pans. Bake for 30 mins until golden and risen.
