Basic Vegetable Fettuccini

  • 1 head broccoli
  • 1 head cauliflower
  • 2 tablespoons olive oil
  • 2 zucchini
  • 1 onion
  • 3 carrots
  • onion soup mix
  • 1 (12 ounce) can evaporated milk
  • 1 cup cheddar cheese (shredded)
  • 1 cup milk
  • 1 lb fettuccine
  • 12 lb bacon

Directions

    Chop the broccoli and cauliflower and put into boiling water for 10 minutes.

    Heat the olive oil in a skillet and add the zucchini, onion and carrots.

    Sautee the vegetables for 10 minutes and add the broccoli and cauliflower.

    Add the onion soup mix and evaporated milk, let cook for 5 minutes over medium heat.

    Add the cheese and milk and cook for another 5 minutes, until cheese is melted through.

    As this cooks fry the bacon.

    Serve the vegetable mixture over noodles and crumble the cooked bacon on top.
