  • 1 lb. chorizo or Italian sweet sausage, sliced
  • 1/2 c. chopped onion
  • 1 c. diagonally sliced celery
  • 4 Idaho potatoes, pared and diced
  • 1 (16 oz.) can tomatoes
  • 3/4 c. water
  • 1 tsp. lemon juice
  • 1 beef bouillon cube
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. dried leaf thyme
