- 1/2 lb. pepperoni
- 1 chicken breast (12 oz.)
- 1 leek, chopped (can use onion)
- 2 cloves garlic, minced
- 4 medium carrots, sliced
- 2 c. shredded cabbage
- 2 cans kidney beans
- 1 (16 oz.) can tomatoes
- 1 1/2 tsp. salt
- 1 tsp. thyme
- 1/2 tsp. pepper
Directions

1Saute pepperoni about 5 minutes and remove.

2Saute chicken strips in pepperoni drippings.

3Add leek, garlic and carrots and saute for 3 minutes.

4Stir in cabbage.

5Add tomatoes, beans, seasonings, pepperoni and chicken.

6Bake at 325° for 1 hour and 15 minutes.
